Paska- ukrainian easter bread

I have already mentioned this  type of bread before and now it's the time for the recipe.

This recipe belongs to my mom's friend Marika ( thanx to them both for sharing it).


The original recipe calls for fresh yeast, but  personally i  prefer to use instant yeast. 


If u would like to use fresh or dry yeast here is the converter:
7 grams instant yeast  = 21 grams fresh yeast =9 grams active dry yeast.


Because fresh yeast has moisture in it, you should use 3 times the fresh yeast in weight for the same rising ability of instant yeast and 2.5 times the amount for active dry yeast.
Also i used  a strong baking flour for bread.


Pasca recipe:
(makes 2 big loves or 4 small)


This recipe requires 3 dough rising, so be patient.

Starter:
17 gr instant yeast=50 gr fresh yeast= 21.5 gr dried yeast 
200 ml of warm milk  
250 gr flour
60 gr sugar

Dough:
750 gr flour
100 gr sugar
200 gr milk
3 eggs
100 gr butter, melted and cooled plus extra for greasing
2 tsp salt
100 gr raisins

Glazing:
1 egg, beaten

First few more tips
1) Don't use a measuring cup for scooping the flour!  the weight will be always different from volume!
2) Always sift the flour, this process enriches  flour with air which helps the bread to raise.
3) Close all the doors and windows. The yeast dough doesn't like draft and cold.
4) Eggs should be at room temperature. If u forgot to take them out before, just put them for 5 minutes in warm water.
5) Read the whole recipe before you start baking
6) Buy an oven thermometer ( they are not expensive but can save you from a lot of troubles. For example  the temperature that my oven shoves differs from the real temperature for 20 C/68 F.


Let's start then.


Combine yeast and milk, leave it for 10 minutes to dissolve completely.
Add sugar and flour, mix for 8-10 minutes, transfer to a lightly oiled bowl, cover with film and then with a bath towel. 
 Put the bowl in a non draft place ( i put mine into the oven) and let it rise for 2,5 hours. 

When the dough has risen put it back to the mixer bowl and add the rest of ingredients, mix for 8-10 minutes ( the dough should remain a little bit sticky but should come off easily from the walls of the bowl). Turn the dough back to the oiled bowl, cower with plastic wrap and with the towel. Leave it to rise for another 2,5 hours. 





After 2,5 hours u can divide the dough between your forms but before it, turn your oven  to 180 C/356 F.  
I use 1 liter enamel cups and a round form for a cake, but u can put this in any form u like, there is only one rule about it- it should be round.


So, grease your forms generously with butter fill them up with the dough to 1/3 of volume, cover with a towel and let it rise for 1 more hour. Before placing your dough into the oven grease the top of the bread with a beaten egg. Bake for 30 minutes.  Check with the toothpick if the inside of the bread is ready (the toothpick should come out dry). The top of the bread should nice caramel color.
Take the bread out of the oven and let it cool in the forms for 30 minutes after transfer to the wire rack and let it cool completely.
This bread tastes the best with the butter and smoked ham:)

Ukrainian Easter - Paska

This Sunday we will be celebrating ukrainian Easter. 

I am sooo excited because it will be my first Easter in Australia( last year i went home to Ukraine).


So now it's up to me to maintain all the traditions.


In Ukraine Easter isn't about chocolate eggs and bunnies. It's the biggest religious Holiday that celebrates renewal and life after death.


Almost every person goes to church that day ( this is probably the only one religious Holiday in Ukraine that has that power). 

But it's not only because of Sunday service, it's because we bless our food. And it's a lot of fun!!! Because the Holy water falls not only on the food but also on you and i don't know why but that makes me very happy and that feeling remains the same since the childhood.

Usually we fill a basket with homemade cottage cheese, sausage( kovbasa), butter, home baked sweat bread( Pasca), horse radish, salt and of course the eggs!!!

Some people put a few different meats in there as well ( like smoked ham, black pudding, pate etc).

Also the hand embroidered Easter towel and a long candle is a must!!!

I am very happy that here in Perth we have a Ukrainian church
http://www.catholicukes.org.au. And of course i will go this Sunday to bless my homemade food, my first easter basket:)) That makes me sooooo excited!!!

Yes i will bake, cook and make everything by myself!!!

I bought the sausage skin the other day ( well i didn't buy it. I just went to my local butcher and ask him if he had some for sale and he gave it to me for free!!! Yey!!! He said there is enough for about 10 kilos of kovbasa)!!!


So Thursday or Friday i will be busy making them.

Tomorrow i am going to paint the eggs ( pysanky) and Saturday will be all about making cheese and baking Paska.



Hope everything will end up being perfect!!! I am counting on it, because it's not only my first time- it's the first time for my australian family too:))


Український Великдень - Паска

Цієї неділі ми будемо відзначати український Великдень - Паску.

Я дуууже рада, тому що це буде моя перша Пасха в Австралії ( минулого року я літала додому, в Україну).


Так що тепер збереження українських традицій залежить від мене.


В Україні Великдень ніяк не пов'язаний з шоколадними яйцями і кроликами ( на відміну від Західних держав та Австралії).
Це найбільше релігійне свято, яке святкує оновлення та життя після смерті.


Майже кожна людина йде  до церкви в цей день (це, мабуть, тільки одне релігійне свято в  Україні, яке має таку силу).

Але це не тільки через недільну службу, але й через те , що ми освячуємо їжу. І це  дуже велике задоволення! Тому що свята вода потрапляє не тільки на їжу, а й на вас, і я не знаю чому, але це робить мене дуже щасливою, і це почуття залишається незмінним з  самого дитинства.


Зазвичай ми заповнюємо кошик  домашнім сиром, ковбасою, вершковим маслом, паскою, хріном, сіллю та, звичайно ж, яйцями!

Дехто кладе до кошика кілька м'ясних виробів ( копчену шинку, кров'янку, паштетівку і т.д.).

Крім того, вишиваний  великденський рушник і довга свічка є обов'язковим!


Я дуже рада, що тут, в Перті,у нас є українська церква  http://www.catholicukes.org.au . І, звичайно,  цієї неділі  я піду  святити мій перший паскальний кошик:)) Я дууууже зворушена через це!


Так, я буду пекти, готувати і робити все сама!


Днями я купила шкіру для ковбаси (ну не зовсім купила. Я пішла до  місцевого м'ясника і запитала його, чи  є дана шкірка для продажу, і він дав мені її безкоштовно! Ура! Він сказав, що тут достатня кількість на 10 кілограмів м'ясних виробів)!


Таким чином, в четвер або п'ятницю я буду зайнята виготовленням ковбаси.


Завтра я збираюся фарбувати писанки, а в суботу буде пeктися Паска.

Сподіваюся, кінцевий результат буде ідеальним! Я розраховую на це, тому що це не тільки мій перший раз, це перший досвід для моєї  австралійської  сім'ї   :))
